Avocado and Mint Aiolis

Avocado and Mint Aiolis can be poured over veggie burgers, wraps and crunchy salads. You can use them as a dip for vegetables, crackers, or even as a spread atop pizzas! It’s the classic French sauce, a fantastically creamy, savory “mayonnaise sauce” that is a snap to make.

Ingredients

  • AVOCADO AIOLI:
  • 1 avocado
  • 1/4 cup cashew creme
  • 2 tablespoon basil or cilantro
  • 2 tablespoon lime juice
  • 1 clove garlic
  • 4/5 teaspoon tumeric
  • salt and pepper to taste
  • RAW MINT AIOLI:
  • 1/2 cup cashews
  • 1/4 cup water
  • 1/4 cup fresh mint
  • 2 tablespoon lemon juice
  • 2 cloves garlic
  • 1/2 teaspoon salt

Instructions

  1. FOR AVOCADO AIOLI:

  2. Blend cashews until creamy. Add avocado, lime and cream again. Stir in spices by hand.

  3. FOR RAW MINT AIOLI:

  4. Blend cashews until creamy. Add the rest and blend until creamy. Best chilled.
