Yields4 cups
Ingredients
- 2 tablespoon olive oil
- 1 whole shallot, minced
- 4 cup peas, frozen and defrosted or made from scratch
- 1 cup vegetable broth
- Salt and black pepper, to taste
Instructions
- In a medium pot, heat the olive oil on medium heat. Add in the shallots and cook until softened.
- Pour in the peas and vegetable broth and bring to a boil. Reduce heat to a simmer for about 10 minutes. Turn off heat and allow to cool a bit.
- Transfer to a food processor or blender. Puree until smooth.
- Pour back into the pot to warm. Season with salt and pepper and serve immediately.
