- 2 tablespoon olive oil
- 1/2 cup celery, finely diced
- 1 cup onions, finely diced
- 1/2 cup carrots, finely diced
- 3 clove garlic, minced
- 2 scallions, finely chopped
- 2 tablespoon herbes de Provence
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground pepper
- 5 cup chicken stock
- 1 (14-ounce) can fire-roasted diced tomatoes
- 1 cup carrots, cut into 1/4-inch rounds
- 1/4 cup parsley, chopped
- 1/2 head red cabbage, chopped

Instructions
To Make the Soup

Heat olive oil in a large pot. Then add the celery, onions, carrots, garlic and scallions. Stir in the herbes de Provence, red pepper flakes, salt, and pepper.

Saute until carrots are slightly tender and onions are starting to break down.

Add the chicken stock, tomatoes, chopped carrots, parsley, and cabbage. Bring to a boil then reduce heat to a simmer. Cook until cabbage is tender. Taste and add more seasonings if needed.
