Homemade Cheddar Broccoli Soup

Ingredients
- 1/2 cup cup finely chopped onion
- 1/4 cup butter
- 1/4 cup flour
- 2 cup whole milk
- 3 cup chicken stock
- 2 cup medium cheddar cheese, grated. Tillamook cheddar recommended
- 1 pound steamed broccoli, cut into a large chop
Instructions

Saute onions in butter till tender.

Add flour and cook a couple of minutes. Add milk and chicken broth, stirring constantly until thickened. Start with 3 cups of broth and add more if the soup gets too thick.

Season with salt, pepper and a dash of cayenne pepper. Add grated cheese and stir until melted. Add broccoli and stir. Add a dash of paprika for a little color.
