Ingredients
- 2 cup butternut squash, steamed until soft
- 3/4 cup low sodium chicken broth
- 2 teaspoon margarine
- 1/4 cup onion, finely chopped
- 1 tablespoon whole wheat flour
- 1 cup skim milk
- 3 ounce reduced fat cheddar cheese, shredded
- 1 tablespoon reduced fat Parmesan cheese, shredded
- 2 cup broccoli florets, steamed, chopped
Instructions
- In blender or food processo, purée cooked squash and low sodium broth until smooth and set aside.
- Melt margarine over medium-high heat in a large saucepan.
- Add onion and sauté until soft, 4-5 minutes.
- Sprinkle with flour and cook for another minute.
- Gradually add squash mixture and milk.
- Heat, stirring gently, until just below boiling.
- Add reduced fat cheddar and Parmesan cheeses. Whisk until cheese is fully melted.
- Stir in broccoli. Serve immediately.
