Bok Choy and Mushrooms
This healthy vegetable side dish uses only a small amount of sesame oil and vegetable broth. This is a great compliment to lean protein.
Ingredients
- 1 teaspoon sesame oil
- 2 cup sliced mushrooms
- 1/2 teaspoon ground ginger
- Salt and pepper to taste
- 3/4 cup vegetable broth
- 2 pound bok choy, diagonally sliced into 1-inch pieces
Instructions
- Stir fry mushrooms and bok choy until slightly soft.
- Add in ground ginger.
- Turn burner to high and add in vegetable broth and sesame oil. Stir until liquid reduces.
- Add any salt and pepper to taste. Serve with brown rice and a lean protein.
