Stuffed Acorn Squash

Ingredients
- 1 acorn squash
- 4 links of Morningstar sausage
- 1/3 cup wheat germ
- 2 tablespoon cheese
- 1/4 cup chicken broth
- 1 cup onion, diced
- 2 tablespoon garlic, minced
- 1/8 cup fresh sage
- 3 cup baby spinach
- Olive oil spray
- Salt, to taste
Instructions
- Cut your acorn squash in half and remove seeds. Spray down your acorn squash with olive oil spray and sprinkle with sea salt.
- Place your acorn squash in a baking pan, that you've sprayed down with olive spray, cut side down. Into a 425 degree F oven they go for 20 minutes.
- Dice up your onion and sage. Defrost your Morningstar sausage in the microwave and chop up.
- Once your Acornn Squash has been roasting for 20 minutes, go ahead and flip them over on the other side and pop them back in the oven for another 20 to 30 minutes or until tender.
- Meanwhile let's get that stuffing together! Shoot down a pan with olive spray and heat. Add in your Morningstar sausage, sage, onion and minced garlic and cook until onion is translucent and soft. Add your chicken broth and fresh spinach. Allow to cook until your spinach is wilted. Now you can add your wheat germ.
- Once your Acorn Squash is done time to stuff! Top each half with a tablespoon of cheese and back into the oven they go until the cheese is melted, approximately 4 minutes. Serve and enjoy!
