Cooking MethodCasserole

Ingredients

  • 4 can pinto beans, including the liquid
  • 3 tablespoon paprika
  • 1 tablespoon black pepper
  • 1 tablespoon salt
  • 1 tablespoon sugar or sugar substitute
  • 1 tablespoon chilli powder
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon red pepper

Instructions

  1. Whisk spices together until well combined.

  2. Place 2 heaping tablespoons of the spice mixture in a cast iron pot or casserole dish with the beans (a casserole dish will get black from the smoke, so use an old one).

  3. Place the uncovered pot way in the back of your pit and allow to smoke for 2 to 3 hours. Smoke longer for a stronger flavor.

  4. Take the pot off the pit and stir well.

  5. Place a lid on the pot and keep warm in a oven or sit the pot on the cover of your pit to keep warm until ready to serve.
