Tis the season for asparagus! During this time of year it is in abundance, and seems to be on sale in all the grocery stores I receive ads for! With Easter just around the corner, I think this would be a great no fuss way to serve a brunch crowd. Or, if you are entertaining dinner guests with an Easter ham, serve this using your leftovers the next day to ease you back into the workweek.

This looks delicious! I would definitely try the lower fat version and make this with the partial egg white substitution. The chives and asparagus will give this dish a wonderful fresh taste. I bet this would even taste good as a chilled leftover.
