This casserole looks so yummy! You could swap out the cheese with dairy-free cheese and the sour cream with cashew cream for a vegan alternative. Or if you just have dairy allergies like me.

What a great recipe - made even healthier with brown rice in place of white, 1/2 cup pureed nonfat cottage cheese and 1/2 cup lowfat sour cream in place of 1 cup regular sour cream, and reduced-fat shredded Mexican cheese. This taco casserole even with the healthy substitutions is just delish! By the by, 1/12th is about 162 calories. So good! Thanks for sharing!
