Make Ahead Breakfast Casserole
Prepare this simple and quick breakfast casserole the night before and you will have a delicious hearty meal waiting for you in the morning. This casserole has all your favorite breakfast standbys: eggs, cheese, toast and veggies. We should all be eating breakfast, but we all don't have to make it every morning. Breakfast casseroles like this give you no excuse to not eat the most important meal of the day.
Notes
Substitute 6 slices cooked, crumbled bacon for the ham.

Ingredients
- 6 slices whole wheat bread, cut in cubes
- 2 cups low-fat cheddar cheese, grated
- 1 cup ham, cubed (optional)
- 1/4 cup green pepper, finely chopped
- 1/2 cup onion, finely chopped
- 6 eggs
- 3 cups skim milk
Instructions
- Mix bread, cheese, ham, bell pepper, and onion; spread in a 13x9x2-inch baking dish sprayed with nonstick cooking spray.
- Whisk eggs and milk together, and pour over top.
- Cover dish with foil and freeze. (You can also make this in the evening, refrigerate overnight and bake in the morning.)
- To prepare for serving, thaw dish and bake uncovered in a preheated 375 degree F oven until the eggs are set.

All you people who are complaining about it not being vegan are ridiculous! Nowhere does it state that it's vegan or vegetarian. If it were truly vegan, you'd have to eliminate the ham, milk, cheese and eggs anyway. Why on earth would you be looking at an egg recipe if you're vegan to begin with? Stop your griping!

Leave ou meat it is VEGAN!!! As with any recipe calling for meat leave it out...

Hi jas59md - We consider this a vegetarian recipe because it does not include any meat. Ham is listed as an optional ingredient; if you decide to add ham, the casserole would no longer be vegetarian. -The editors of FaveHealthyRecipes

The recipe indicates that ham is optional it is true that if you choose to include it, the recipe becomes non-vegetarian.

This is NOT Vegetarian !! Ham happens to be meat. I am very disappointed.
