Cashew Coconut Granola

Ingredients
- 2 cups Roman Meal Cream of Rye, or Roman Meal Original with Oats
- 2 cups old fashioned oats
- 1 cup large unsweetened coconut flakes
- 1 cup cashews
- 2/3 cup honey
- 1/2 cup brown sugar
- 2 tablespoons canola oil
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 300 degrees F.
- Combine cereal, oats, coconut and cashews in a large bowl. Mix together the honey, brown sugar, oil and vanilla in a small bowl until smooth.
- Pour honey mixture over cereal mixture, stirring until well coated. Spread mixture onto two 15x10x1-inch baking sheets.
- Bake for 20 minutes, stirring once, until golden brown and dry. Cool completely; store in airtight container.
