Low Fat Cheese and Chicken Casserole

Ingredients

  • 2 tablespoons butter substitute
  • 1 tablespoon unbleached flour
  • 1 green pepper, chopped fine
  • 16 ounces chopped mushrooms
  • 1/4 ounce can of chopped pimento
  • 2 cups skinless chicken, chopped and cooked
  • 1 cup skim or 2% milk
  • 1 can low sodium cream of mushroom soup
  • 1 can low sodium cream of chicken soup
  • 1/2 pound low fat cheddar cheese, grated
  • 1 package of spaghetti (wheat or regular)

Instructions

  1. Saute green pepper in butter substitute and add unbleached flour, mushrooms, and pimento.
     
  2. After light cooking, add both cans of soup, fat free milk and 1/2 of the low fat cheese. Cook until hot and bubbly, then add the skinless chicken.
     
  3. Cook the spaghetti and put into a lightly sprayed baking dish. Pour sauce over the noodles and mix well.
     
  4. Bake at 350 degrees F for 1 hour or until lightly browned.  Add rest of cheese and bake until melted.
