Raspberry Cream Cheese Butter Cookies

Raspberries contain lots of in vitamin C and antioxidants, so why not get them from a cookie? You may want to vary this butter cookies recipe by using strawberry instead.

Ingredients

  • 1/2 pound butter substitute
  • 1 cup sugar substitute
  • 2 1/2 cups flour, all-purpose
  • 2 egg whites
  • 4 ounces reduced fat cream cheese
  • Smuckers low sugar raspberry jam, to taste

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Cream together the butter substitute and sugar substitute.
     
  3. Add the flour, egg whites, and mix well. Add the cream cheese and mix well.
     
  4. Roll into balls about 5/8 inch diameter.
     
  5. Place them on an ungreased cookie sheet (the cookies don't grow when baked, so they can be somewhat close together).
     
  6. Then press your thumb into each to flatten it and make an indentation to hold some jam. Fill it with jam.
     
  7.  Bake at 350 degrees F for 15 to 20 minutes.
