Basic Low fat Oatmeal Cookies
You can add anything you like to these Basic Low-Fat Oatmeal Cookies. They are great with dark chocolate chips, dried cherries or raisins. Add some nuts if you want to go crazy!

Ingredients
- 1 1/2 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 6 tablespoons unsalted margarine, softened
- 1/2 cup unsweetened applesauce
- 1/3 cup honey
- 1 large egg, slightly beaten
- 1 cup old fashioned rolled oats
Instructions
- Preheat oven to 375 degrees F. In small bowl, combine flour, cinnamon, baking powder and salt.
- In a large mixing bowl, beat margarine with mixer (or by hand) until creamy.
- Add in applesauce, honey and egg. Gradually add in flour mixture until dough forms. Stir in oats.
- Drop dough by spoonfuls on greased cookie sheets. Bake 10-12 minutes, until lightly golden.
- Add pecans, almonds, walnuts, or raisins, as you prefer. Or use very chunky applesauce. Variation: Add bits of crystallized ginger.
