Pumpkin Cookies

Ingredients
- 1 can organic pumpkin
- 1 cup applesauce
- 3 scoops of Vanilla Whey Protein Powder
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 egg
- 1 teaspoon pumpkin pie spice
- 2 cups steel cut oats
- 4 packets of Truvia stevia
- 1 teaspoon salt
Instructions
- First up you'll want to grind up your oatmeal to form a flour. I used a food processor.
- Next combine all your ingredients into a bowl and mix.
- Set your oven 350 degrees F.
- Place the cookie mix in the fridge to chill for about 15 minutes.
- Now to start dropping your cooking onto a cookie sheet that you've sprayed down with olive oil. Use a tablespoon to scoop out your cookie dough and drop them onto your sheet.
- Bake in the oven for 15 minutes. Allow to cool and enjoy!
