Cocoa Amaretti
For a yummy take on traditional amaretti cookies, bake this version with cocoa. Not only will you reap the benefits of the Vitamin E in the almonds, you'll also get the antioxidants in the cocoa.

Ingredients
- 4 eggs
- 2 cups sugar
- 1 small bottle almond extract
- 3 tablespoons cocoa powder
- 6 cups ground almonds
- 1/2 cup confectioner's sugar
- water
Instructions
COOKIES
- Preheat oven to 350 degrees F.
- Beat eggs, add sugar and almond extract.
- Mix cocoa and almonds; combine with egg mixture.
- Drop by spoonfuls on a cookie sheet lined with parchment.
- Bake at 350F degrees for 8-10 minutes.
GLAZE
- Stir water into confectioner's sugar, a teaspoon at a time, to make a thin glaze.
- Roll warm cookies in glaze and allow to cool to set.

Most "extracts" are in grain alcohol which does contain gluten. Not too much, so some people aren't bothered, but some people with celiac disease are sensitive, so keep it in mind.
