Lemon Chicken Pasta Salad
Lemon Chicken Pasta Salad is the perfect light lunch that will satisfy your appetite without ruining your diet. Ingredients
- 8 ounces whole wheat Rotini pasta
- 1/2 cup non-fat Greek yogurt
- 1 cup light mayonnaise
- 2 tablespoons lemon juice or the juice of one small lemon
- 2 tablespoons lemon zest
- 2 tablespoons capers, drained
- 2 cups chopped or shredded cooked rotisserie chicken
- 6 large basil leaves, torn into pieces (optional)
Instructions

Cook pasta in boiling, salted water according to package instructions, drain and add to a large non-reactive (glass) mixing bowl.

In separate, smaller glass mixing bowl, combine Greek yogurt, mayonnaise, lemon juice, lemon zest and capers.

Pour sauce over pasta and add cooked chopped/shredded chicken.

Add basil and gently toss to combine.

Serve immediately if serving warm or refrigerate 2 hours, if serving cold.

I have recently switched our pastas to whole wheat. This recipe looks tasty, although a cup of mayonnaise even light mayonnaise is a high fat addition. I would use a thicker low fat or zero fat yogurt at least partially in place of the mayonnaise.

While pretty good, there is a contradiction right off the bat. The description of this recipe says you use Greek yogurt instead of mayonnaise. Then in the ingredients, there is only a 1/2 cup of yogurt but a full cup of mayonnaise. The description is misleading. Still, pretty good overall and tasty and a little lighter.

Pretty good, tasty and a little lighter. But the description of the recipe is misleading. The description says "and calls for Greek yogurt instead of mayonnaise." But the ingredients list 1/2 cup yogurt and 1 cup mayonnaise. So not replacing much with yogurt. Description should be more accurate with actual ingredients .
