Lentil Salad with Pears and Cauliflower

Ingredients
- 3 cups water
- 2/3 cup dried lentils
- 1 cup cauliflower florets
- 1 ripe firm pear, peeled, seeded and chopped
- 1 cup seedless cucumber, chopped
- 2 green onions, sliced
- 3 tablespoons fresh lemon juice
- 4 tablespoons extra virgin olive oil
- 2 tablespoons fresh mint, chopped
Instructions
- Bring water and lentils to boil in heavy medium saucepan. Reduce heat to medium-low, cover and simmer until lentils are tender but still hold their shape, about 20 minutes.
- Once the lentils are cooked, drain and run under cold water to cool. Make sure to drain well.
- Meanwhile, blanch cauliflower in pot of boiling salted water until just crisp tender, about 2 minutes. Drain. Run under cold water to cool. Drain well.
- Combine all ingredients in large bowl. Season generously with salt and pepper if desired.
- Refrigerate until serving, or up to 8 hours.
