Ingredients

  • 1/2 medium onion
  • 1/2 red pepper
  • 1/2 green pepper
  • 4 ounces ham
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 large eggs
  • 1/2 cup cream
  • 4 ounces cheddar cheese, shredded
  • 1/3 cup almond flour (omit on Induction)
  • 1 teaspoon dried parsley

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. In a large skillet, add some butter, the onion, green pepper, red pepper, salt, and black pepper. Cook until tender. Reduce heat once veggies are tender, and add ham.
     
  3. In a large bowl, add eggs. Beat lightly. Add cream, cheese, almond flour, and parsley. Beat the ingredients together.
     
  4. Spray a muffin tin well with cooking spray. Pour egg mixture into each hole, and then add ham / veggie mixture to each muffin hole. Push ham under the surface.
     
  5. Bake for 12 to 15 minutes until the eggs are set.

This looks delish and I am going to try it both with and without the almond flour. THANK YOU for the video! BUT PLEASE OH PLEASE don't scrape your nonstick pans with a metal utensil... I cringed with every scrape while you were putting the onion/pepper/ham into the cups! YIKES! But otherwise, the video is clear and informative. I appreciate it.

What does the (omit on induction) comment regarding the almond flour mean? The only thing I think of is induction cooktops but that doesn't seem to apply here' Jim B.

Jim... that comment is in reference to the ATKINS DIET INDUCTION stage... you want to avoid carbs so you can leave the almond flour out.
