    Ingredients

    • 2 boxes basic cornbread mix
    • 1 can corn kernels, strained (you can use 2 ears fresh if you have it)
    • 1 cup plain yogurt
    • 2 eggs
    • 2 tablespoons butter, melted

    Instructions

    1. Pour cornbread mix into a large bowl. Fold in yogurt, eggs, and butter until just combined, then fold in corn.
       
    2. Let mixture sit for 10 minutes. The baking powder will activate, creating little air bubbles in the batter. This will help it stay light when baking, so this is a very important step.
       
    3. Meanwhile, line a muffin tin with paper liners. Once batter is ready, fill each liner 2/3 full.
       
    4. Bake at 400 degrees F for 20 minutes, or until tops are light golden brown.
