Ingredients
- 2 boxes basic cornbread mix
- 1 can corn kernels, strained (you can use 2 ears fresh if you have it)
- 1 cup plain yogurt
- 2 eggs
- 2 tablespoons butter, melted
Instructions
- Pour cornbread mix into a large bowl. Fold in yogurt, eggs, and butter until just combined, then fold in corn.
- Let mixture sit for 10 minutes. The baking powder will activate, creating little air bubbles in the batter. This will help it stay light when baking, so this is a very important step.
- Meanwhile, line a muffin tin with paper liners. Once batter is ready, fill each liner 2/3 full.
- Bake at 400 degrees F for 20 minutes, or until tops are light golden brown.
