I really want to try this recipe! The cottage cheese makes it much more wholesome than traditional homemade macaroni and cheese, while really cutting out the fat. It adds a lot protein. I am curious though, where I would find manchego cheese, as I don't recall seeing anything like this where I shop. Is it a Mexican style cheese? Otherwise, is there another more readily available cheese that I could substitute in its place while still being lower in fat?
