Loaded Bean Soup

Notes
In the package of beans there is a nasty "ham flavoring" packet that I just throw out. I use the smoked ham hocks or anything that is cheap and then I throw that meat out because it is usually tasteless by then. I just use it for the flavor.
To make this recipe on the stovetop:
- Sort and wash beans and place in pot. Cover with water two inches above the beans and soak overnight.
- Drain beans; add two quarts water and the onion and garlic.
- Cover and bring to a boil; reduce heat and simmer 1 1/2 hours or until beans are tender.
- Add ham hocks, salt and tomatoes and simmer an additional 30 minutes.

Ingredients
- 1 pound 16-bean mixture
- 2 quarts water
- 1 large onion, chopped
- 1 garlic clove, minced
- 3/4 teaspoon salt
- 16 ounces canned diced tomatoes (save the liquid)
- 10 ounces canned diced tomatoes and green chiles (save the liquid)
- 1 pound lean ham hocks
Instructions
- In your slow cooker, put the beans, water, onion and garlic and cook that for about four hours on low.
- Then, add salt, ham, tomatoes and cook that another few hours until the meat is tender.
