Skinny Enchilada Soup
Skinny Enchilada Soup is a lightened up version of a Paula Deen recipe. It cuts a ton of the calories, but none of the flavor. This healthy vegetarian soup is loaded with three different kinds of beans, fire-roasted tomatoes, onions, and corn. Oh, and it can't be an enchilada soup without the cheese - lots of it. This delicious soup is ultra cheesy, spicy, and hearty. This easy soup recipe is also very versatile. If you want meat, feel free to add ground beef to the recipe. If you're really busy, just throw all the ingredients into a slow cooker and let it do all the work for you.

Sometimes during the busy school and work week, I like to make things simple by serving a soup and salad dinner. I tried this Mexican themed soup alongside a simple taco salad, and it was a huge hit. I had some leftover roast chicken in the fridge from the weekend, so I shredded some of that up and added it to the mix. It wasn't too spicy, and the fire roasted tomatoes give the soup a great umami flavor.

This soup looks amazing and I like the use of zero fat dairy. I also like the use of black beans as a meat substitute. They are very healthy and delicious and I also use them in many of my dishes. One of my favorite dishes is black bean enchiladas.
