Vegan No Bake Chocolate Orange Cheesecake

Ingredients
- CRUST:
- 1 cup almonds, ground
- 1/4 cup honey
- 1/4 cup cacao powder
- 1 dash salt
- 1 tablespoon coconut oil (optional)
- FILLING:
- 1 1/2 cup macadamia nuts, or cashews
- Juice of 2 oranges
- 3 tablespoons psyllium seed
- 1 tablespoon orange zest
- 1 tablespoon coconut oil
- 1/4 cup raw honey
- 1 teaspoon vanilla extract
- Almond milk or coconut milk, as needed
Instructions
- Grind almonds in a food processor until they make a coarse meal. Add honey, cacao powder and salt, oil if desired. Press into a pie plate or tiny tart bowls.
- Blend macadamia nuts with oranges, seeds, zest, oil, honey, vanilla, salt and chosen milk alternative beverage until mixture is very creamy, adding liquid slowly, as needed.
- Pour nut mixture into crust and let set in fridge to chill and firm.
