    Low fat Roasted Tomatoes and Veggies

    This vegetable recipe is super-easy to prepare and requires no fat. Just toss all the ingredients together and bake!

    Ingredients

    • 4 tomatoes, cut into wedges
    • 3 green peppers, sliced
    • 1/3 cup vegetable broth
    • 1/4 teaspoon white pepper
    • 1 red onion, cut into wedges
    • 3 tablespoons lemon juice
    • 1 teaspoon dried rosemary

    Instructions

    1. Preheat oven to 450 degrees F.
       
    2. Combine all ingredients in large nonstick baking dish; toss.
       
    3. Bake vegetables for 15 minutes or until tender. Serve over rice.
