Ingredients

  • 1 pound extra lean ground beef
  • 6 tablespoons reduced fat cream cheese
  • 1 3/4 cup mushroom soup
  • 1 cup canned corn with pimento
  • 1 package Pillsbury Grands! Biscuits Homestyle — Reduced Fat Golden Wheat

Instructions

  1. Brown ground beef in a pan, and then drain off any excess fat.

  2. Mix together the cream cheese, soup, and corn in a separate bowl. Pour mixture into 2-quart casserole dish. Add beef and then top with reduced fat biscuits. 

  3. Bake in a preheated 350 degrees F oven for about 20 minutes.

Notes

For this recipe, try using the Easy Cream of Mushroom Soup recipe instead of canned soup.

Additionally, you could also use the dough from the Guilt Free Cracker Barrel Style Biscuits recipe or from the KFC's Borrowed Biscuits Recipe.

I'm pretty sure that during the depression, the only ingredient they would have had...Maybe...would be Full fat ground beef and possibly the mushroom soup. People shouldn't label this a Depression Era recipe.

This is a depression era-inspired recipe. Even though it doesn't come straight from the 1930s, we still think you'll love this casserole!

I really enjoyed this casserole and loved how they lightened up the recipe. I would just add a little more ground beef. I feel like each bite could have used more meat. The flavors were wonderful and I will definitely make this again!

What a great flavor combination - plus that secret ingredient, cream cheese. Well, the secret's out, I suppose. So easy, so tasty, and quick, to boot. This recipe is definitely a keeper.

I loved that this casserole didn't leave me feeling overly stuffed. The corn inside was my favorite part!

When I first saw this casserole, I thought it would be too "bready." Although the biscuit top is rather thick, the flavors of the meet and veggies work perfectly with the biscuit. It was a great combination!

I don't normally like ground beef, but this was absolutely delicious! I loved the different textures and the corn was a really great (and unexpected) addition. My favorite part was the biscuits - yum!

I don't know about EVERYONE else, but I find whitedog's comment to be offensive. I for one, do NOT want to "cook" every night of the week & welcome recipes such as this that require a minimum of effort & measured, chopped, diced ingredients. THANK you to the site for this EASY to do recipe! It sounds delicious! I can't wait to "assemble" it. & ENJOY it! :)

AND if you paid attention and kept reading you'd SEE that there are alternative MAKE them yourself ways to replace the canned soup and the refrigerated rolls. SO quick to judge! :(
