I love traditional chili but am looks for ways of cutting down on my meat intake. This recipe is a little nontraditional and would make a nice change. I like how it includes all those vegetables, which must taste great when simmered together with all the beans and spices! But can anyone tell why instant coffee is added to the recipe?
