    This stuffed peppers recipe is much healthier than traditional recipes I have seen, which usually include some sort of sausage and white rice. The red bell peppers are much sweeter than the green ones, and they make for a beautiful presentation. I have even made these using shredded leftover rotisserie chicken in place of the lean beef, and they turned out wonderful. A real crowd pleaser!
