Bubble Tea
Making bubble tea is just like making iced tea, except that bubble tea features sweet tapioca balls. Sweet and filling, this is one of the best tea drink recipes to finish a feast.
Notes
Variations: prepare the tapioca pearls by adding with sugar to boiling water and simmer briefly; use a blender; add various flavorings (coffee, almond, etc. -- use your imagination); use sweetened condensed milk; use green tea, etc.
You can use orange pekoe tea or Chinese litchi tea if desired.

Ingredients
- 1/2 cup cooked large tapioca pearls, chilled
- 1 cup ice, crushed
- 1 cup very strong black tea, chilled
- 1 cup skim milk, or to taste
- Sugar substitute or honey, to taste
Instructions
- Place the pearls in a large parfait glass.
- Combine crushed ice, tea, milk and sweetener in a cocktail shaker, and shake vigorously until the mixture is frothy.
- Pour into the glass, and serve with extra-thick straws.
