Baked Cinnamon French Toast

Ingredients
- 8 slices whole grain bread
- 1 1/2 cup evaporated skim milk (12 ounces)
- 2 eggs
- 4 egg whites
- 1/4 cup brown sugar or equivalent Splenda brown sugar blend
- 1 teaspoon vanilla extract
- 3/4 teaspoon cinnamon
Instructions
- Spray a 9x13-inch pan with nonstick cooking spray. Arrange the bread slices in the bottom of the pan.
- Whisk together evaporated milk, eggs, egg whites, brown sugar, vanilla, and cinnamon.
- Pour the egg mixture evenly over the bread slices in the pan. Cover tightly with plastic wrap or aluminum foil. Refrigerate for several hours or overnight.
- Preheat the oven to 350 degrees F. Spray the bread with cooking spray. Bake until lightly browned, about 30-35 minutes. Serve hot with maple syrup, powdered sugar, and cinnamon.
