Ingredients
- 2 (1-pound) bags frozen hash browns (diced variety)
- 1/2 cup onion, finely chopped
- 16 ounces fat-free sour cream or plain, fat-free yogurt
- 1 can reduced-fat, low-sodium cream of chicken soup
- Salt and pepper, to taste
- 2 cups reduced-fat, sharp cheddar cheese, shredded
- 1/2 cup butter or butter substitute, melted
- corn flake crumbs for topping
Instructions
- Preheat oven to 350 degrees F.
- Spray a 9 x 13-inch baking pan with nonstick cooking spray.
- In large bowl, combine hash browns, onions, sour cream or yogurt, and cream of chicken soup. Salt and pepper to taste; mix well.
- Place hashbrown mixture in baking pan.
- Top hashbrowns with shredded cheese, drizzle with melted butter, and sprinkle cornflake crumbs evenly over the casserole.
- Bake at 350 degrees F for 60-90 minutes.
