Low Fat Breakfast Bake
Finding yummy but healthy recipes for breakfast casseroles can be difficult. But this Low Fat Breakfast Bake delivers full flavor without the fat, calling for Tabasco sauce and green onions for extra tastiness.
Notes
The original recipe called for frozen hash browns with cheese and I can't find them in the supermarkets here but maybe you can. Usually I increase the amount of Tabasco sauce - let your own tastebuds be your guide.

Ingredients
- 1 1/2 pound frozen hash browns, thawed
- 5 eggs or equivalent egg substitute
- 2 scallions, chopped
- 1/2 cup cottage cheese
- 1/4 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1 teaspoon Tabasco sauce
- 8 slices turkey bacon, cooked and crumbled
Instructions
- In large bowl, combine hash browns, eggs, cottage cheese, scallions, pepper, garlic powder, and Tabasco sauce. Blend well.
- Pour hash brown mixture into large casserole dish. Cover with plastic wrap and refrigerate overnight.
- Sprinkle turkey bacon over casserole and bake at 350 degrees F for 30 minutes.
