I love the savory flavor of the roasted veggies in this healthy dish! It brings out the sweetness of the peppers and onions, and since it is not fried in a skillet with a lot of oil or butter, the potatoes don't have a chance to soak up a bunch of fat! If you wanted to make it completely vegan, you could swap out the egg for some beans and still get a filling and savory breakfast treat.
