Chocolate Mud Brownies
For a healthier way to indulge your chocolate brownies cravings, bake up a batch of these Chocolate Mud Brownies from Adele of Vegie Head (www.vegiehead.com). These homemade brownies are healthier than a typical batch as they don't have milk or eggs in them.

Ingredients
- 1 cup gluten free flour (lupin, spelt, rice or coconut)
- 1 teaspoon salt
- 1/2 cup coconut sugar or agave
- 3/4 cup raw cacao powder
- 2 teaspoons natural vanilla extract
- 3/4 cup oil (safflower, canolia or sunflower)
- 4 tablespoons ground flax meal
- 1/8 cup cold water
Instructions
- Put the flour, salt, coconut sugar and cacao powder into a blender, and gently blend to mix.
- Then, add the vanilla, oil, flax seed meal and water. Blend everything on high and pour into a large non-stick baking dish.
- Bake for 45 to 50 minutes on 180 degrees C (355 degrees F). Use a bamboo stick, insert and if it comes out clean, it is ready.
