Make Ahead Coffee Cake

Ingredients
- 3/4 cup butter or margarine, softened
- 1 cup sugar, or equivalent sugar substitute suitable for baking
- 2 eggs
- 1 cup fat free Greek yogurt
- 2 cups flour, all-purpose or white whole wheat
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon nutmeg
- 3/4 cup light brown sugar substitute
- 1/2 cup pecans, chopped
- 1 teaspoon cinnamon
Instructions
- Cream together the margarine and sugar substitute until light and fluffy. Add eggs and Greek yogurt; mix well.
- Combine flour, baking powder, baking soda, salt and nutmeg. Add the flour mixture to the batter and mix well. Pour batter into greased and floured 13 x 9 x 2-inch baking pan.
- Combine together the brown sugar, pecans and cinnamon. Sprinkle one half of this mixture over cake batter; swirl mixture through batter. Top remaining 1/2 mixture evenly over cake batter. Cover and chill overnight.
- Uncover and bake in preheated 350 degree F oven for 35 to 45 minutes, or until cakes tests done with toothpick.
