- 2 tablespoons coconut oil
- 1 medium yellow onion, peeled and chopped
- 1 each yellow, orange and red pepper, seeded and chopped
- 8 ounces mushrooms, wiped clean and coarsely chopped
- 8 ounces lean ground beaf
- 8 ounces Italian sausage, casings removed
- 3 whole zucchini, sliced lengthwise into 1/4-inch slices
- 1 (6-ounce) can tomato paste
- 1 (14-1/2-ounce) can diced fire roasted tomatoes, drained
- 3 ounces baby spinach
- (16-ounce) cottage cheese
- 1 egg
- 2 tablespoon chopped fresh Italian flat-leaf parsley
- (12-ounce) deli sliced Provolone cheese
- (12-ounce) mozzarella ball, sliced
- 3 ounce shaved Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper

This would be a good recipe to make when my son is visiting with his girlfriend who is gluten intolerant. It has lots of vegetables and other tasty ingredients. I would add a couple cloves of pressed garlic for added flavor.

I've never had no-pasta lasagna before, but I'm willing to give it a try since it seems like such an easy recipe!
