Ingredients
- 2 pounds sweet potatoes, peeled and cut into 1-inch cubes
- 3/4 cup brown sugar
- 1/4 cup maple syrup
- 1/4 cup milk
- 2 eggs
- 1/4 cup butter, room temperature
- 1/4 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/4 cup flour
- 3 tablespoons butter, melted
- 1/2 cup pecans, coarsely chopped
Instructions
- Boil the sweet potatoes in water until tender, about 20 to 30 minutes. Once cooked, drain and mash.
- Mix in 1/4 cup of the sugar, maple syrup, milk, eggs, room temperature butter, cinnamon, vanilla extract and salt. Pour the mixture into a baking dish.
- Mix 1/2 cup brown sugar, flour, melted butter and pecans until the mixture forms crumbs. Then, sprinkle it on top of the sweet potatoes.
- Bake in a preheated 375 degrees F until golden brown on top, about 30 minutes.
