The arrangement of all the different colored veggies in a spiral is so pretty and festive! You could try several different variations to this simple casserole - those small Chinese style eggplants would be great in here, or you could even swap out peeled and sliced sweet potatoes for the white. A mandolin makes quick work of the slicing, so it really doesn't take much prep time other than the arranging.
