Ingredients
- 16 ounces can low sodium pork and beans
- 4 boneless chicken pieces
- 1/4 cup reduced sugar ketchup (catsup)
- 2 tablespoons peach preserves
- 2 teaspoons onion, minced
- 1/4 teaspoon reduced sodium soy sauce
- 1/4 cup brown sugar
Instructions
- Preheat oven to 325 degrees F.
- Place beans in bottom of 2-quart casserole dish. Place chicken on top.
- Mix together reduced sugar ketchup, peach preserves, onion, reduced sodium soy sauce and brown sugar Pour over chicken and beans.
- Cover and bake in oven for 1 hour and 45 minutes until golden brown.

This was a really hardy and delicious meal. I doubled the recipe (teenagers) and used 1/2 catsup and 1/2 BBQ sauce and everyone loved it. The leftovers were great too!
