Ingredients
- 8 ounces whole grain noodles, cooked al dente
- 3 cups lean chicken, cooked and diced
- 1/2 cup celery, diced
- 1/2 cup green pepper, diced
- 1/2 cup onion, diced
- 4 ounces fresh mushrooms, sliced
- 1/2 cup low sodium chicken broth
- 1/2 cup reduced fat Parmesan cheese, shredded
- 2 tablespoons butter or margarine, melted
- 1 cup reduced fat cheddar cheese, grated
- 1/2 teaspoon basil
- 1 1/2 cup fat free cottage cheese
- 1 can low fat cream of chicken soup
Instructions
- In a lightly greased slow cooker, combine whole grain noodles, chicken, celery, green pepper, onion, and mushrooms. Stir until all ingredients are evenly distributed and noodles are separated.
- Pour chicken broth over the top and stir.
- In a separate container, combine low fat Parmesan cheese, melted butter or substitute, low fat cheddar cheese, basil, fat free cottage cheese. Stir thoroughly.
- Add cheese mixture to crock pot and stir to combine.
- Pour low fat cream of chicken soup over the top. Stir until the contents have an even consistency and noodles, chicken, and veggies are evenly distributed.
- Cover and cook on low for 6-10 hours or cook on high for 3-4 hours.
