This is such a creative and healthy swap out from traditional fried rice. I have been reading a lot lately about the cancer fighting properties of cruciferous vegetables, and cauliflower is probably my favorite. I have had bad luck in the past using white rice, as it sometimes clumps, or gets too pasty. The texture in this recipe might even be better.
