Ingredients
- 4 small boneless, skinless chicken breasts
- 1 tablespoon + 1 tablespoon extra-virgin olive oil
- 1/2 pound button mushrooms, sliced
- 1/2 cup finely chopped onion
- 1/2 cup fat-free half and half
- 2 tablespoons country dijon mustard
- freshly ground pepper
Instructions

Pound the chicken to an even 1/4-inch thickness.

In a large non-stick pan, heat 1 Tbs. of the oil over medium heat until shimmering.

Saute the chicken until browned, about 4 minutes.

Turn the chicken over and saute until cooked through, 3-4 minutes. Remove from the pan to a serving plate and keep warm.

Add the remaining 1 Tbs. of oil to the pan. Stir in the mushrooms and onions. Cook until lightly browned, 2-3 minutes.

Remove from the heat, and stir in the half and half and mustard.

Season with pepper and spoon over the chicken.
