Chicken Spanaki

Ingredients
- 4 large chicken breasts, butterflied (or you can butterfly them yourself)
- 1/4 cup olive oil
- 1/2 onion, chopped
- 1 scallion, chopped
- 1/2 pound frozen spinach (frozen+drained)
- 1/2 pound crumbled feta cheese (reduced fat)
- 1 egg
- 1 tablespoon dried dill or ¼ cup fresh dill
- 1/2 tablespoon pepper
- oregano, to taste
- lemon juice, to taste
Instructions

Preheat broiler.

Sautee onion and scallions in the olive oil on medium heat for 1 minute.

Add spinach and sautee for 10 minutes.

Butterfly the chicken breasts while the spinach is cooking. (You can butterfly them beforehand, if you wish.)

When spinach is cooked, put the spinach and onion mixture in a bowl to cool.

Mix spinach, ricotta, dill, and pepper until combined.

Stuff butterflied chicken breasts evenly.

Broil for 10 minutes, flip, and broil for 10 additional minutes.

If desired, add oregano, squeeze fresh lemon juice and add a little olive oil to the finished product.
