Curried Chicken with Papaya Citrus Garnish

Ingredients
- 3 chicken thighs, deboned, skinless
- 1 cup flour
- 2 teaspoons curry powder
- 1 teaspoon paprika
- 1 teaspoon season salt
- 1 teaspoon white pepper
- 1 1/2 cup orange juice
- 2 teaspoons curry powder
- 1 tablespoon cornstarch
- 1/3 cup brown sugar
- 2 cups sliced papaya
- 2 teaspoons ginger, minced
- 2 teaspoons garlic, minced
- 2 teaspoons cilantro, chopped
Instructions
- Combine flour, curry powder, paprika, salt and pepper. Dust chicken in curry mixture. Pan fry in wok.
- Mix orange juice, curry powder, cornstarch, brown sugar and papaya together. Combine ginger, garlic and cilantro in a bowl.
- Place pan fried chicken in baking pan. Pour papaya sauce mixture over the top of the chicken. Sprinkle with ginger/garlic/cilantro mixture. Bake at 350 degrees F for 45 minutes.
- Place chicken curry on top of a bed of rice and garnish with papaya, citrus fruit, cilantro and flowers.
