This salad definitely looks like Christmas! Since it is so easy and quick to make, you could cut the recipe down and make a smaller quantity for a quick healthy snack for yourself. I would even add in Halos or regular oranges for an even sweeter taste. Don't have time to slice up a pineapple? Buy cut up pineapple at your local grocery store.
