Ingredients
- 1 cup flour (reduce by 1/4 cup if you wish to include protein powder)
- 1 scoop protein powder (optional - reduce flour by 1/4 cup)
- 2 teaspoons cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup NuNaturals NuStevia Sweetenerâ„¢ Stevia Baking Blend, or their MoreFiberâ„¢ Baking Blend
- 1/4 cup canola oil
- 1 teaspoon vanilla
- 1/2 teaspoon mint extract (optional)
- 1/4 cup miniature semi-sweet chocolate chips
Instructions
- Preheat oven to 350 degrees F.
- Lightly spoon flour into a dry measuring cup and level with a knife.
- Combine flour, (protein powder, if using), cocoa, baking powder, and salt, stirring with a whisk.
- Place Stevia Baking Blend & oil in a large bowl; beat with mixer at high speed until well blended. Add vanilla and mint (if using), beat well.
- With mixer on low speed, gradually add flour mixture. Beat just until well combined, then fold in chocolate chips.
- Drop by tablespoonfuls 2 inches apart onto sprayed baking sheets.
- Bake10-12 minutes or just until set.
- Remove from oven & cool on pan for 5 minutes.
