Sweet Potato Spice Cookies
For a healthy cookie recipe that is just about impossible to turn down, bake up a batch of these Sweet Potato Spice Cookies from Kim of Mo'Betta. Made with whole wheat flour and without milk or eggs, this is one of the best sweet potato recipes for your body and your taste buds.

Ingredients
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 tablespoon cinnamon
- 1 teaspoon ginger
- 1/2 teaspoon nutmeg
- 1/4 cup milled flaxseed
- 1/2 cup (heaping) sweet potato puree, fresh or canned
- 1/4 cup molasses
- 1/3 cup olive oil
- 1/4 cup Stevia, or sugar of choice
- 1/4 cup brown sugar
- 2 tablespoons water
- Raw cane sugar, for sprinkling
Instructions
- Preheat oven to 350 degrees F.
- In a large bowl, mix flours, salt, baking soda, cinnamon, ginger, nutmeg and flax seed.
- In a small bowl, mix sweet potato, molasses, oil, and sugars.
- Fold the wet ingredients into the dry ingredients. Dough will be dry. Add water and mix well. Dough will be thick.
- Make 1 inch balls of dough, place on silicone mat lined baking sheet. Press down (cookies will not spread). Top with raw sugar if desired.
- Bake cookies for approximately 8 minutes.
