Ingredients
- 3/4 cup flour (I used Bob's Red Mill Gluten Free Mix)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup NuNaturals NuStevia Sweetener Stevia Baking Blend, or their MoreFiber Baking Blend
- 1/4 cup beets, pureed
- 1 teaspoon canola oil
- 1/2 teaspoon vanilla
- 1 square Baker's Chocolate, melted
- Chocolate chips (optional)
Instructions

Combine all dry ingredients and stir

Make a well in the center and add beets, vanilla and oil. Mix to combine

Stir in chocolate chips if you are using

Drop by tablespoonfuls onto greased cookie sheet

Bake at 350 degrees F for 10 to 12 minutes

While cookies are cooling , melt the chocolate square in the microwave, being careful not to overheat

Spread melted chocolate on top of cooled cookies
