No Fail Pumpkin Spice Cookies
Even if you think that healthy baking is beyond your abilities, you can make these No Fail Pumpkin Spice Cookies. Simply follow the instructions, and the result will be one of the yummiest pumpkin cookie recipes you have ever tried.
Ingredients
- 2 1/2 cups white whole wheat flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 teaspoons pumpkin pie spice
- 1 cup SPLENDA® Brown Sugar Blend
- 1/2 cup sugar substitute suitable for baking
- 3/4 cup butter substitute, softened
- 1 large egg
- 1 cup pumpkin
- 1 teaspoon vanilla
- 1 cup raisins
- 1/2 cup walnuts, chopped
Instructions
- Preheat oven 300 degrees F.
- In medium bowl, combine flour, baking soda, salt, and pumpkin pie spice. Mix well with wire whisk. Set aside.
- In large bowl,blend sugar substitutess with a mixer set at medium speed. Add butter substitute and beat to form a grainy paste.
- Scrape sides of bowl, then add egg, pumpkin, and vanilla. Beat at medium speed until light and fluffy.
- Add flour mixture, raisins, and walnuts. Blend at low speed just until combined. Do not overmix.
- Drop by rounded spoonsful onto ungreased cookie sheets, 1 1/2-inch apart.
- Bake for 22 to 24 minutes, until cookies are slightly browned along edges. Immediately transfer cookies to a cool surface.

If you don't use Splenda, is it possible to substitute regular brown sugar or honey
